Remove all produce from supermarket plastic bags before placing in the drawer — the BioFresh system manages humidity better than sealed bags.
Cut or partial vegetables: wrap the exposed face loosely in beeswax wrap or paper. Do not seal airtight.
* Eggplant prefers 10–12°C — use the main fridge if eating within 1–2 days, or keep on the bench and refrigerate only when needed.

Avocado and stone fruit: ripen on the bench first, then move here to slow further ripening.
* Cheese: keep in a sealed container or well wrapped in beeswax wrap to prevent odour transfer. Soft fresh cheeses (ricotta, fresh mozzarella) are better kept in the main fridge in their liquid.
Butter: backup stock can go here in a sealed container. The near-zero temperature suits it well. Use whichever drawer has more space — it works equally well in the meat drawer too.

Keep a small amount of butter in a dish on the bench for daily use — the backup stock goes in whichever drawer has space.
Soft fresh cheeses in liquid (ricotta, fresh mozzarella) are better kept here or in the main fridge in their tub, rather than in a BioFresh drawer.

Cold damages tomatoes — it destroys texture and kills flavour. Keep them on the bench always, dehydrating to semi dehydrated stage, the flavours are wonderfully intensified.
Bread goes stale faster in the fridge. Freeze for longer storage and refresh briefly in the oven. Freezing also helps with resistant starches.
General Principles
- Always remove produce from supermarket plastic bags before placing in BioFresh drawers — the system manages humidity better without them.
- If you have two BioFresh drawers, keep fruit and vegetables separate. Fruit releases ethylene gas which accelerates vegetable spoilage.
- The meat drawer is the coldest zone — prioritise anything with the shortest safe life or most to gain from very cold storage.
- Beeswax wrap is ideal for cut produce and cheese — it allows slight breathability without drying out.
- Butter and cheeses work well in any drawer except the high humidity vegetable one — use wherever space allows, in a sealed container.
