This is such an easy way to cook pancakes for group of people. It takes about 10 minutes to make the mix up and 10 minutes to cook. It’s so fast that this is one of those times where you really do need to turn the oven on to preheat before starting the preparation.
This is so much easier than being tied to a fry pan and warming drawer when making pancakes for a group of people.
Any excess can just be sliced into sandwich sized pieces and toasted in an air fryer for a couple of minutes when required.
SHEET PANCAKE
This recipe feeds at least one 15 year old boy and another 4 adults.
Ingredients
- 2 cups plain flour
- 3 tbsp white or raw sugar
- 1 tbs baking powder
- 1 tsp carb soda
- 1 tsp salt
- 1/2 tsp grated nutmeg
- 1 tsp ground cinnamon
- 2 cups whole milk, kefir or buttermilk
- 2 large eggs
- 1 tbsp fresh lemon juice
- 4 tbs melted, cooled butter
Optional toppings
- Blueberries, raspberries, bananas, apple (any pieces of fruit that can be sliced or chopped or used whole.
- Cream cheese dollops
- Sprinkle of cinnamon and sugar
Method
- Turn on the combi oven to hot air steaming and preheat to 205C
- Put a sheet of baking paper or a silicone sheet into the base of a 40 x 30 sheet pan
- Add all the dry ingredients to a large bowl and whisk well to mix them all together.
- Add the egg, milk, lemon juice and stir to combine
- Fold in the melted butter
- Spread the mixture into the pan and even out with a spatula
- Add any optional toppings by placing the fruit evenly on the surface. Cream cheese chunks, interspersed with berries and sprinkled with cinnamon sugar looks and tastes amazing.
- Cook for 8 to 10 minutes. Look for some slight browning and the mix to puff up.
- Remove from oven and cut into 6 slabs or 12 smaller slabs for a more stacked presentation.
- There are lots of options for serving;
- Drizzle with honey, maple or golden syrup,
- Freshly squeezed lime or lemon juice and a dusting of icing sugar.
- Some butter, jam, fresh fruit
- Bananas candied in brown sugar
