This is such a simple, quick, super easy, cheap recipe that I had to write it down for future reference and emergency visitors.

I came across it on TikTok and then I read the comments. Apparently adding eggs to a cake mix is not unusual, apparently any flavour cake mix will do. Further research showed heaps of similar recipes with lots of variations

I put in a Woolworths order and got a box of Greens Red Velvet cupcake mix and experimented.

The tasters approved.

RED VELVET CUPCAKE BISCUITS

Makes 24 mini cupcake biscuits. The mix is quite sticky so I find it easy to bake in silicone cupcake trays. It is easier and faster to scoop them into the containers than try to roll them into biscuits and put on a tray.

Ingredients

  • I box Red Velvet cupcake mix
  • 2 eggs
  • ½ cup light olive oil
  • 150g white chocolate chips (can also use chocolate or melts, or smarties or a mix of anything)
  • Icing sugar for sprinkling on top

Method

  1. Preheat the oven to 180°C
  2. Put the cake mix into a bowl
  3. Add the eggs and olive oil and mix until combined
  4. Fold in the chocolate chips.
  5. The mix is quite sticky. Use a lever action ice-cream scoop to share the mix between 24 cup cake moulds. They rise quite a bit so not much is needed in each.
  6. Sprinkle each one liberally with icing sugar (a tea strainer makes it easy)
  7. Use a shot glass to push each one down in a few spots to create a mosaic type pattern in the surface as they rise.
  8. Place in the oven. They will be cooked in about 10 minutes. Test with a tooth pick.
  9. Leave for a few minutes to cool before unmoulding.
