This couldn’t be easier and more pure – there is almost nothing in it and as breakfast when you are totally over no carb days then it fills the gap.
There is enough here for 4 serves – it is so easy that to make enough for two or six is just a matter of doubling or halving the ingredients – nothing is very difficult.

Ingredients
- Sweet potatoes – about 3 medium sized ones, peeled and grated (food processor on the shredding blade)
- 4 eggs
- 3 tbs corn flour
- 1 tsp salt or Vegetta for a more interesting taste
- pepper to taste
Method
- Mix the salt and pepper in with the grated sweet potato, stir well and let sit for 30 minutes. Moisture will be released from the sweet potato.
- Gather up handfuls of the mixture and squeeze it well.
- Put the squeezed mix into a separate bowl with the eggs and cornflour, stir well.
- Heat a fry pan with a few tablespoons of coconut or olive oil. Add dollops of the mix and spread it out to cover the pan base with a spatula and flatten it down as it cooks.
- When the base has browned put the pan under a hot grill until browned.
- Remove to a bread board and slice into segments. Serve as a side or just a bar snack.
