This couldn’t be easier and more pure – there is almost nothing in it and as breakfast when you are totally over no carb days then it fills the gap.

There is enough here for 4 serves – it is so easy that to make enough for two or six is just a matter of doubling or halving the ingredients – nothing is very difficult.

Ingredients

  • Sweet potatoes – about 3 medium sized ones, peeled and grated (food processor on the shredding blade)
  • 4 eggs
  • 3 tbs corn flour
  • 1 tsp salt or Vegetta for a more interesting taste
  • pepper to taste

Method

  1. Mix the salt and pepper in with the grated sweet potato, stir well and let sit for 30  minutes. Moisture will be released from the sweet potato.
  2. Gather up handfuls of the mixture and squeeze it well.
  3. Put the squeezed mix into a separate bowl with the eggs and cornflour, stir well.
  4. Heat a fry pan with a few tablespoons of coconut or olive oil. Add dollops of the mix and spread it out to cover the pan base with a spatula and flatten it down as it cooks.
  5. When the base has browned put the pan under a hot grill until browned.
  6. Remove to a bread board and slice into segments. Serve as a side or just a bar snack.
